Gumbo Cook-Off Guidelines To ensure a safe, fair, and enjoyable event for all participants and attendees, all teams must adhere to the following guidelines: General Cooking Requirements Each team is required to cook a minimum of five (5) gallons of gumbo and twenty-five (25) pounds of rice. Gumbo may not be sold. Samples will be provided exclusively in 3 oz. cups to individuals who have purchased an official tasting wristband. The cups & spoons will be provided by the Cullman Area Chamber Foundation. All preparation and cooking must take place in the team’s designated area, in the open, and not inside closed tents, trailers, or enclosed structures. Teams must provide their own tent to cover their workspace. Tents must be 10x10 in size and remain open-sided to allow for inspection and visibility. Food Safety & Sanitation All ingredients are subject to inspection by the designated Gumbo Coordinator. Inspections of products and cooking processes may occur at any time during the event. All food must be prepared using sanitary food-handling practices. Hats or hairnets and disposable gloves are required for all team members handling food. Teams will have shared access to water supply and hand-washing facilities and are expected to use them appropriately. Teams are responsible for keeping their cooking and serving areas clean throughout the event and for proper cleanup at the conclusion of the cook-off. Dumpsters will be provided. Judging & Awards Each team will be assigned a team number for judging purposes. The team captain is responsible for verifying that the assigned team number is clearly marked on the sample container. No additional markings, names, logos, or text may appear on the judging sample container. No rice is permitted in the gumbo sample submitted for judging. Awards will include: Overall Winner, as determined by the official judges People’s Choice Winner, as voted on by tasting wristband participants Music & Decorations Event music will be provided. Teams that choose to play additional music must do so at a reasonable volume that does not disturb neighboring teams or detract from the event. All team decorations must be family-friendly. Any offensive or inappropriate decorations, signage, or materials will be removed at the discretion of event organizers. Compliance Failure to comply with these guidelines may result in disqualification or removal from the event.
